I made over 1000 bars of dark chocolate before I realized that not everyone likes dark chocolate!  Most importantly, my wife! So into the test kitchen I went to develop a milk chocolate finely tuned to her taste buds.  I think we landed in a great place.  Our evaluation reveals: an immediate slightly milk forward taste followed by a solid backbone of deep chocolate flavor and a velvety smooth and creamy mouthfeel with just enough cane sugar to balance everything out so it is not too sweet.
