50% Milk Chocolate Single Origin Bean to Bar

Although I prefer dark chocolate, my lovely and talented wife really likes milk chocolate. So I have been reading about milk chocolate and working up some batches in the test kitchen. 


There are just four ingredients in a bar of bean to bar milk chocolate: cocoa nibs, cocoa butter, whole milk powder, and cane sugar. Besides using premium quality and fair trade ingredients, the differences in various milk chocolate bars lie in the proportion of those four ingredients. 


I think we have landed in a great place. A velvety smooth and creamy mouthfeel, slightly milk forward (this is milk chocolate after all), with a solid backbone of chocolate with well balanced sweetness. 


To my sweet wife: thanks for waiting while I made 1000 bars of dark chocolate before attempting a milk chocolate bar. I believe you when you say it is the best milk chocolate you have ever tasted. It’s not like you are biased or anything.
