Cocoa beans have terroir, just like wine grapes and coffee beans.  This means the beans have their own unique flavor profile based on where they are grown: soil, elevation, rainfall, amount of sunshine - all these things and more affect flavor.  It is fun to try chocolate from different countries to compare flavors!
