I really love this bread and it is currently my wife's favorite bread. I think I have only eaten it toasted! It just wants to be toasted...I don't know what it is. :-)
I think the toasting brings out the corny flavor of the cornmeal. The cranberries (they are "craisins" so they are dried with a bit of sugar to take the very tart edge off of the cranberry.) give it a little pocket of sweet/tart when you catch one in your bite. It is also a pretty high hydration bread so it will be moist. Please note: it is not underbaked! It is just super moist due to the soaked cranberries and the cornmeal porridge. It is one of the defining qualities of the bread, and probably why I want to toast it.
So the full ingredient list is as follows:
-unbleached, unbromated white flour
-100% whole wheat (milled fresh just prior to mixing)
-cornmeal porridge (this is just cornmeal with about 3 x its weight in water and I slowly cook it over medium heat until almost all the water is absorbed into the cornmeal)
-dried cranberries
-sourdough starter - mostly for a bit of flavor and it adds to the keeping quality as it lowers the pH a bit
-sea salt and instant yeast
I would highly recommend trying it as toast! I just top it with a pat of salted butter - oh man...it is heavenly - the crunch, the corniness, the sweetness, the buttery goodness of it all in a single bite.
