There is just something about this cookie. It is a butter cookie but two things make it special: 1) oven roasted pecans. Man, if you want to know the power of oven roasting a nut, just take any unroasted nut you have, like pecans, walnuts, or almonds and put them in a 350 degree oven for about 10 minutes or until you can smell them in all their roasty goodness wafting through your kitchen. Let them cool and then sample the roasted and unroasted side by side. The difference is unbelievable! You will never look at a sad unroasted nut the same ever again! OK, back to the two things. The oven roasted pecans give an extraordinary flavor boost not to mention a nice crunch. 2) I add cocoa nibs to the dough. So cocoa nibs are what real chocolate is made from. The nibs are just roasted cocoa beans (notice how the cocoa beans are roasted too?) that are broken up during the winnowing process (long story). So it is not like putting chocolate chips in the dough, it is more like a crunchy suggestion of chocolate. Those two things elevate this butter cookie to something that my wife declares is her favorite cookie. Give them a try!
